My Pallete editor is messed up, On the tutorial, it said do the funky Patterns, and then press the button that said "Convert the game to hi-colour, but mine said "Change colour depth"
What the heck do I do?

You can convert the game to hi-color (or even true-color) to eliminate the need to define the palette.  If your game is in 256-color, then you are limited to the colors you define in the palette.  Else you can use pretty much any color you can think of...

I think the problem is that the tutorial is a little out-of-date in some (minor) places. IIRC, there only used to be 2 options - 256 colour and hi-colour - so the button could only change to hi-colour. Now there are 3 options - 256, hi- and true-colour - and the label has been changed accordingly. So what the heck do you do? Just push the button and pick a resolution.
I know what you're thinking ... Don't think that.
