The final number in a group changes?

Very close to the logic behind the solution.

The number doesn't change.... but....

A 9 changes to a 0?
Life is a puzzle, a quest and an adventure

Oh, "50" was wrong then.

I thought...
century counts 50 years once
week doesn't reach 50 days
hour reaches 50 minutes once
minute reaches 50 seconds once

months and days have specific names so they are viewed by roman numerals

april, july - 50 often
no letter "L" in any of the days

But it's often in a months, not often in months, right?

SOOOOO CLOOOOSE!!!

The actual answer was

31:

What happens once during a century, (Some version of 31 years... 1931 for example)
Never during a year, (There are never 31 months during a year)
Often during a month, (There are more often months with 31 days)
Never during a week, (A week never has 31 days)
Never during a day, (A day never has 31 hours)
Once during an hour, (An hour always has 31 minutes)
Once during a minute? (A minute always has 31 seconds)

A maze you run through every day,
But never see the walls,
You often use it to pay,
Without it civilization falls.

Well the obvious answer would be money, but since time is money and that's often what you 'pay' with it could be time too.

But I'm gonna go with 'life'.
It's like a maze because we're 'lost' in the middle of it. The 'walls' could represent birth and death.
We 'pay' by using our life to work. Without lives civilisation can't exist.

None of those was the answer I had in mind but viable ideas...

Also a nice one that fits well, but not the answer I had in mind.

It's an actual physical thing.
