I'd say that FutureWars is the classic point 'n' click -game with the best graphics ever.
Used to playing PoliceQuest, Larry, and SpaceQuest, I was absolutely stunned by
Futurewars graphics. Just look at them..

Estaog

Woooooww!

That is some totally cool art! I haven't played much of the older games, but from what I played, these are the best.

Privateer Puddin'

Monkey Island 2 (backgrounds)
Beavis and Butthead Virtual Stupidity (because it looks so much like the show, and i was a huge fan when i was like 9 or something :D)

Mr Jake

I like
BASS:

Broken Sword (both):

And its newer, but I really liked the MI3 art work.

I like the futurewars external locations, but I dont really like the look of the internal (top left) so much

Estaog

Yea broken sword had some really nice art.

I believe Future Wars was one of the first adventure games ever to use VGA graphics, so it was way ahead of its time. What I loved about the game is the music, and how it managed to be almost polyphonal over the PC speaker.

But I'd also have to give Kyrandia (I or II) a honorary mention for graphics.

Some favourites:

Lure of the temptress

Curse of the monkey island

Beneath a steel sky

Kings Quest 6

Space Quest 6

Simon the sorcerer 2

Babar

I love the graphics of King's Quest 6. It is the best that Sierra ever achieved of that particular style of graphics.
I did not realise that Future Wars used VGA. I always thought that it was just clever use of the colours available that made their backgrounds so beautiful

Now, with his very own game: Alien Time Zone

Helm

every game exxos/delphine made was beautiful.

Captain Blood:

Flashback:

<- note the square resolution. One of the few games to do that.

Also, Kyrandia 1

Goblins 3

and finally, a very underrated (but hellishly difficult) game, KGB

I absolutely love the graphics in Kyrandia 1. I dont know, whenever i play the game i get by a wave of nostalgia to when i was like 6 or 7 playing it. The music in it was beautiful too from what i can remember.

Vel

Indeed, Kyrandia 1 is absolutely gorgeous - I was totally stunned when I first saw it.
Some other games with great graphics are
Runaway
The Dig
Gabriel Knight 1
The black mirror
Quest for Glory IV

Mr Jake

yeah, I forgot KGB but thats one of my favorites aswell.

DanClarke

im a sucker for:

and

Very closely followed by MI2 an MI3.

CoffeeBob

I really like the magic bg's in VGA Loom:

Beautiful! ;_; :P
I also like DotT, MI 1-3, Sam & Max and BaSS. Oh, almost forgot, Gabriel Knight also has neat graphics. ;D
(I know, I should have shrunk it down, but that would've messed it up ;) )

HillBilly

I gotta say MI2, MI3, DOTT, S&M and BS is my favorite letters.

Domino

Kings Quest 7

I love the MI series, but i am more of a Sierra adventure game fan.  I started playing KQ7 again after about 10 years and realized how beautiful a game it is.

MI3 is a very awesome looking game, but i prefer KQ7.

hedgefield

Definately Broken Sword. Too bad I never got Runaway to run on my computer...

Seems like Project Joe will raise the bar in our time.

Babar

It is very interesting to see people's perception of beauty (at least that is what I assume "best graphics" would mean). So far it seems "Beauty" is defined by the amount of detail put into a background. This definition allows for even very old games to be included here

Helm

one of the flashback pics i posted is made with a vector engine, and isn't detailed. But the composition is still very good and stylish. Detail's not everything
