I bought this (http://www.sonyericsson.com/cws/products/mobilephones/seethephone/w580i?cc=us&lc=en) baby today, and instantly loaded some some songs from Elder Scrolls 4: Oblivion onto it. Music in this game is simply too good to stay in game, and I like to carry it into "outside world" for casual listening.
Apart from TES4:Oblivion, I find main theme of Stronghold very good, also some. (http://www.increator.pri.ee/muz/feloniousjunk.mp3) good. (http://www.increator.pri.ee/muz/OfLicious.mp3) tracks from Age of Empires 3 and many-many songs from Hitman games. Jesper Kyd is simply a magician (http://www.increator.pri.ee/muz/StripeClub.mp3). There was some other music I liked too much, but unfortunately I can't remember those game titles right now.

The best game music ever imo is Betrayal at Krondor. Truly harmonic magical music. Not that I listen to such music usually but while playing that game I was really taken by the music. It was above everything ever made for games at that time. And the way the music related to what was happening... so relevant. The music was so strong for me that while reading the book Krondor: The Betrayal years after playing the game it was based on I still played the music from some scenes in my head when reading certain passages. It's as good a music as you expect in a good fantasy movie in its quality and the way it relates to what's happening in the game.

I like the Monkey Island II soundtrack, and I usually listen to it when I'm working on backgrounds.

Ive never played Betrayal at Krondor but I just listened to some of the songs and I like it ALOT :P.
There is so many games with good music that I often listen to while surfing the net, working or just on the train/bus or in a car on my way somewhere.
I love the soundtrack of Beneath A Steel Sky which I listen to VERY often, infact I like most music from older games aswell as the chiptunes from old 8bit games like Alex Kidd, Sonic etc etc.
Also I remember the music of Warcraft 2 which I love!
And also the soundtrack of Legend of Kyrandia book I has alot of good songs.
And the list will just continue and continue!!

Also, the soundtrack to Escape From Butcher Bay (http://en.wikipedia.org/wiki/The_Chronicles_of_Riddick:_Escape_from_Butcher_Bay) is amazing. I think it even won a few awards.
CMI, Grim Fandango, Full Throttle and Disworld Noir. Hitman series and Mafia (non-original) from the non-adventures. It's actually pretty weird that all of these 6 games (except perhaps the Hitman series) that I identify as having great music, I also regard as my all-time favorite games :). Unsurprisingly much of the atmosphere and mood of all of the said games comes from having a great soundscape, which just goes to show how important audio and music are.
Some of the stuff from Beyond Good and Evil, especially the main theme (released for free on the internet and floating (http://www.stormeffect.com/beyond/index.htm) around (http://www.myspace.com/HyllianMusic) somewhere) is very good. I also really like some of the Shenmue tracks especially Everlasting World and Waves of Morning Haze (http://shenmue.planets.gamespy.com/shenmue_music_soundtracks.shtml) (at the bottom of the page. I've also got the Evil Genius (http://www.n1nj4.com/EvilPlanet/Downloads/Audio.php) soundtrack - I love the main theme to that game. I have to admit I've got some of the songs from Sonic Adventure DX and Sonic Heroes too :-[ If you blank out the awful lyrics the music is actually quite good. Sort of.

Double Dragon, Castlevania 1,3, IV, Gradius, Punch-Out!!, Battle of Olympus, and Blaster Master as far as NES games go are the very top for me. Blaster Master in particular is cool. The Oblvion soundtrack largely bored me, though I found some cool replacement tunes that really amped it up. Fable had decent music as I remember.
I can't believe nobody has mentioned Final Fantasy VII yet.

I listen to the Quake soundtrack a fair bit, it was done by Trent Reznor and it's really cool. I also have the Hitman: Blood Money soundtrack, as someone before said, Jesper Kyd is a magician.

Medal Of Honor: Allied Assault has a great orchestral atmospheric music that I like to listen to from time to time.
Super Castlevania IV is still the definitive Castlevania soundtrack.
Flashback, Cybernator, Super Ghouls and Ghosts, Splatterhouse 2, Tenchu: Stealth Assassins, Silent Hill 2, Metal Gear Solid, etc.
A large chunk of Konami's SNES-era soundtracks are very memorable.
Oh, I also listen to the Vampire Bloodlines soundtrack, apart from the menu track, because it's just a knockoff of Massive Attacks Angel. So i listen to that instead. Other than that though it's a great soundtrack.

I rip music from games for ages, I have a whole bunch of mp3s from games. Some downloaded, some ripped. Here is my list:
1. My best it THE one TES3: Morrowind, all of the tracks
2. Red Faction - some perfect electronic/rock music
2 and a half. Mafia - pure jazz
3. Homeword 1 and 2 - Music in these games is one of their best aspects.
3 and half. Operation Flashpoint - some great soundtrack there.
4. 18 Wheels of steel: Pedal to the Metal theme
5. Micro Mashines 2
6. Betrayal at Krondor - who doesn't love it?
7. Stronghold 2
8. Lands of Lore
9. Blood - now this is really scary
10. Golden Axe - remember ?
11. Cannon Fodder main theme
12. Transport Tycoon Deluxe
and also worth to mention is probably music from Steel Panthers: World at War, Thief 2 - perfect ambience, and, as InCreator said, TES4. But at this one, I must admit that whenever I listen to TES4 music, I say to myself: "now this is beautiful, yeah, but it reminds me of that music of the Morrowind masterpiece...". It is indeed great, but Morrowind is the original. It seems to me that they just kind of "edited" the Morrowind "type" of music and put it there.
Anyway, most of the time, I rip the music myself...
Mega Man music (from the NES era) and the Kameo: Elements of Power soundtrack kick a ridiculous amount of butt. :D

Blizzard games were always about rush and speed. What's the first true RTS game in the world? The one that created and laid foundation to whole RTS genre?
Dune 2: Building of a Dynasty. By Westwood. Maybe, the only in game the world that truely needed only STRATEGY and nothing else. You could destroy whole enemy base with one missile launcher. This required exploiting some game bugs though. I'm talking about approaching towers at 25-degree angle, this somewhat made launcher's range a tile greater. Mass attacks didn't work really, due extremely strong (unbalanced) defenses and control issues. Also, things just cost too much to mass them.
Command & Conquer (first)? Same thing again. Mass units cost too much to actually make a swarm, and towers were too strong to even try. It was all about good planning and strategy again.
If you're blaming Westwood for mass tactics, that's probably Red alert (and further games) you're talking about. Mammoth tank, anyone?
But then again, isn't that what's Starcraft is all about?
I never liked Blizzard's RTSes much. Not after Warcraft 2, which took dark forests and sharp arrow from screaming bloody peasant and replaced everything with funny responses and lime-colored orc palette suitable for Disney characters, not brutal beasts orcs were in Warcraft 1. They basically turned deep, dark idea into a f-king wonderland.
Anyway, best gameplay throne has been taken by World in Conflict already, but before that, I consider Westwood being the king.

Coming back to music again, Westwood music is what really feels good along with explosions and sounds of tank tracks rolling. They have surely some geniuses working in sound department. I can't imagine much other game genres where metal-ish trance ("buttrock goa trance" by Ishkur's guide) would sound so right.

Jazz Jackrabbit was awesomeness. Aside from that, my Game Music folder has songs from Betrayal at Krondor (thanks to this thread), Lotus 3, Monkey Island 2, Conquest of Longbow, Quest for Glory, Grim Fandango, Loom and Alien Time Zone (by m0ds ;D). Oh yeah, and nixnax.ogg, although technically that is not Game music.
