Personally I'm hoping to see some of the original background art from GK1. In the "Making of" video (http://www.youtube.com/watch?v=pdXSS4d1VOs) from the cd-rom version you get a glimpse of the intricate brushwork that went into the paintings, but I have a feeling that most of that attention to detail got lost in translation to 320x200 res. All the hand drawn artwork for the (non-remake) VGA Sierra games was amazing. I recall spending hours admiring the production art used to illustrate the "Hero Magazine" booklet that came with QFG4 and rereading the 8 page "Shaping of Shadows of Darkness" making-of section in the hint book.
The only downside to this book is that I'll now have to buy a coffee table to keep it on.

I'd love to see such a book for the classic LA games.
Well, there is this book: Rogue Leaders (http://www.amazon.com/Rogue-Leaders-LucasArts-Rob-Smith/dp/0811861848), but it was apparently "meh". I can't remember so much as to why it was "meh" but I'd look up some fan reviews first.
Not adventure related, but if you enjoy production artwork, I recommend the digital art-book Bioshock: Breaking the Mold (http://news.softpedia.com/news/BioShock-Artbook-Out-Download-Here-64660.shtml). Also, there's a really nice Half-Life series art-book titled Half-Life 2: Raising the Bar, but to my knowledge there are no *ahem* legal e-book versions for download.
Personally I'm crazy about these things - for a brief moment I considered buying the collector's edition of Alan Wake even though I don't own an Xbox 360 (nor was I very impressed by the story and gameplay after watching a playthrough), just to get the lovely looking Alan Wake: Illuminated art-book.
Edit: And if you're into LucasArts in general and not only the games, From Star Wars to Indiana Jones: The Best of the Lucasfilm Archives (http://www.amazon.com/Star-Wars-Indiana-Jones-Lucasfilm/dp/0811809722/ref=sr_1_1?s=books&ie=UTF8&qid=1286634679&sr=1-1) is awesome - in fact I'm pretty sure I stole the art style for my game from the set design sketches for Indy 3.
Aaahhhhohmygod. I looked so hard for a Bioshock art book but I foolishly only looked in book shops.
I want this Sierra thing too, anything to encourage more of this sort of thing.

I'm not sure the Bioshock book was ever in bookstores. As I remember, they printed a limited run of the book as a gift to people who had bought the collector's edition of the game and found that their Big Daddy figurine had broken during transport, then some time later they released it in PDF format for everyone to download.
