I like to build another interface than the standar one, with 9 buttons. But :
1. In the game, even if I select another type on interface in the game setting, (Sierra, Lucas, etc) the interface in my game remain the same
2. I try to use the example you give in the demo, but I don't like it: in fact, it still appear INTERACT and then is selected an action. I like when I go with the mouse over an OPEN button, the "open" message to appear on my scree.
It is something I miss here ?

You mean from the 'Speech style' drop down? That's the only place I can think you might mean. That really has nothing to do with the interface type - you need to make a new GUI to change that.

2.
What? What demo? Where does INTERACT appear?

Please, can you post again, and be clearer about what you want. (What have you done, exactly? What are you trying to do? Are you using any templates, or are you starting from the default game? Etc..)
I know what you're thinking ... Don't think that.

to make an own interface you neew to design it in the GUI section. what you do is: you create a button, assign graphics to it and select an action. a button can switch to an action mode, and you must give the number of the cursor mode to set it. or you can make it "run script", which allows you to write own code.
it sounds like you expected ags to have a number of premade interfaces, but in fact you really "create your own". read the manual (topic GUIs) to get a more precise guide.
