Is there any way I can have the text appear over the inventory box when it is opened.  When the player comments on the items the text appears under the box and is covered.  If anyone can help me I would appreciate it.  I searched for topics on this but could not find any.  Also is there a list of the text colors and their numbers so I dont have to aimlessly try different numbers to find the color I want.

If you mean speech text (Lucasarts-style) is appearing under the Inventory GUI, that's a well know issue and has definitely been answered before. (I've answered it a bunch of times, so it must be out there...) Basically, Overlays (which speech text uses) are always displayed under GUIs - there's no way around this. The simplest solutions are: 1) use a Display command (unlesss you're using 'Always display text as speech'), 2) use SayAt to position the speech away from the GUI and 3) turn the GUI off before the message is dislayed, then back on afterwards (the 'GUIs turn off' setting for 'When interface disabled' should do that automatically), 4) use a Label on the GUI to display the text, instead of Character.Say/Display.
If you're not using speech text, and you don't have 'Always display text as speech' checked, we'll need a little more info about what you ARE doing.

A list of the common colour codes is available in the BFAQ. For less common ones, the 'Palette' window in the Editor will let you pick your colour using sliders and give you the number, so there's no need for aimless trial and error.
I know what you're thinking ... Don't think that.

I've figured out what he is doing wrong. Set your inventory GUI from persistent to pop-up modal or normal. That should fix your prob.
Worked on Strangeland, Primordia, Hob's Barrow, The Cat Lady, Mage's Initiation, Until I Have You, Downfall, Hunie Pop, and every game in the Wadjet Eye Games catalogue (porting)
