I'm too writing on a western game at the moment, and this certanly inspired me to pick up the script and write some more good western story to it. :D
The style looks very interesting, in a good way.
Id have to say that colouring would definitely heighten the visuals. the use of simple black and white would make the characters seems very flat against the backgrounds. If you don't plan to incorporate colour, than at least some basic grey shading for the backgrounds to make the characters pop a bit more.

Add colour, perspective (if you know what I mean, i.e. adding shades) and also smaller versions of your characters so that you and everyone else here can imagine how they would look like in-game.
Overall, good job. The drawings are artistic. Looking forward to your game.
