Soundclub is my favourite. It's just incredibly easy to use, and can be very versatile if you make your own samples. I use it all the time, now, just for the sheer joy of using it.

Fruityloops isn't free, but the demo is, and with the demo you can export your finished work, you juts cant save it and come back to work on it later.  My feeling is that once you try the demo for a while, you'll have no problem buying the software.

can the demo export midi files?
i've been using flstudio to make midi a lot lately, especially now i've figured out how to make it use my soundcard's sounds rather than the GM.DLS sounds, a selection of which can be found here (http://www.btinternet.com/~boyd1981/gamemidi.rar) which i'm going to be using in a game i'm making called Mr. Angry's Walk In The Park :D
