One category movies I really enjoy are movies that parodies other movies.
So,

It's not considered one of the best, but I love National Lampoon's Loaded Weapon, takes the mick out of Lethal Weapon and a bunch of other action movies. Lots of cameos, Charlie Sheen, Bruce Willis... and if you don't laugh to at least one joke, you're a bit of a humorless bastard :P Another parody but non parody is Last Action Hero. Kind of up to you how far a parody you see it, I guess :) I see it as a genre parody rather than a parody of certain films.
'Shaun of the Dead'. I loved that when it first came out... I can't stand Simon Pegg anymore though.
I second all the movies suggested as well. (Except the ones I haven't seen.)
Though whatever you do, stay the hell away from any "(Movie) movie", unless it's one of the Scary Movies which were funny when I was younger. Not sure if they're still funny though haha.

Spaced is my all time favourite Tv-Series. The amount of movie references is unbelievable. Always something new to discover.
If you like the Pegg/Frost combination you should definetely watch
Shaun of the Dead which is a clever spoof of zombie movies and
Hot Fuzz! which parodies buddy action movies
Spaced is a transgressive masterpiece. However the Pegg/Frost combo is losing momentum. Their movie Paul doesn't come anywhere close on the lol-o-meter to SotD or Hot Fuzz.

Yeah I loved Spaced. It was the best thing coming out of Britain at the time.
But I think Pegg got a bit too big for his boots after America discovered him. Just don't find him funny anymore.
Having said that though, the trailer for Paul looks alright. Has anyone seen this yet? And is it good? It looks like a kind of parody of an American road trip movie, with a bit of light sci-fi thrown in.
I've seen paul on the sneak a few weeks ago so i didnt have any expectations. It was an ok movie I guess but you only caught a glimpse of the old spirit in very few scenes. The rest was quite standart amercan comedy that didnt hurt anyone.
Guilty pleasure, I admit, but I have a soft spot for Kung Pow! (http://www.imdb.com/title/tt0240468/) - it's utterly retarded yet some scenes makes me almost choke from laughing. But my favorite spoof film is Top Secret! as also suggested by tzachs.
Without a clue (http://www.imdb.com/title/tt0096454/) is arguably a spoof of Sherlock Holmes, except Watson is the real brains and Holmes is a drunken idiot he hired to front for him.

Young Frankenstein is wonderful. And I just remembered one other Mel Brooks film - High Anxiety (http://en.wikipedia.org/wiki/High_Anxiety) - which is a quite excellent parody of Hitchcock movies, in particular Vertigo.
U.H.F. with Weird Al Yankovic is very funny imo. it makes fun of Indiana Jones and Rambo. But it's not centered around making parody of other movies but still a very nice film. Michael Richards (Kramer in Seinfeld) has a roll in it as a half retarded janitor. It's about Goerge Newman (Weird al) he's always daydreaming and gets fired from one job after another. His uncle wins a small uhf station and George gets to manage the place...so they have to work hard to make the station profitable and produce good tv shows while fighting against channel 8, the biggest station in town...owned by a tyrant. Oh well...maybe that didn't sound extremely interesting but I love that movie :D
Aahhh, I love this kind of film so much. I wish the market for spoofs wasn't so saturated with those horrible Seltzer And Friedberg movies so new talent that that could get off the ground.
Young Frankenstein's a clear winner for me; but I also loved Naked Gun, Airplane, Blazin' Saddles, Top Secret (doesn't quite have the hit rate of Naked Gun but more than enough moments of genius to make it a classic), Toxic Avenger 4, Team America: World Police and Freaked.
In TV terms I highly recommend the show Community which has entire episodes dedicated to parodying movies; the best I've seen being the paint ball episode which takes the initial premise of Battle Royale then essentially manages to brilliantly send up a different film every few seconds for the rest of it's twenty minutes. Also if you've ever seen an educational video or an episode of Tomorrow's World then Look Around You is bound to entertain. Also, FRANK DREBIN CIDER ADVERTS! I have to say, though, though I love the genre dearly; it's also given me some of my least favourite films. Namely anything by the previously mentioned Seltzer and Friedberg and the Trey Parker abomination Orgasmo.

Gotta speak up behalf of Orgazmo and Trey Parker. Just watched it last week and thoroughly enjoyed it. Great stoner/hangover movie for a day on the couch. Add Parker and Stone's Cannibal! The Musical for a nice double feature.
Leslie's Nielsen parody films are also great. And young frankestein is amazingly amazing.

In addition to movies mentioned above, i can reccomend Jane Austen's Mafia (http://www.imdb.com/title/tt0120741/), a Godfather parody from Jim Abrahams (The director of Hot Shots!). Wrongfully Accused (http://www.imdb.com/title/tt0120901/) is an underrated Leslie Nielsen Spoof making fun of such movies as The Fugitive. In addition, Walk Hard: The Dewey Cox Story (http://www.imdb.com/title/tt0841046/) from 2007 was a pleasant surprise as a music movie spoof, mainly following the story of the Johnny Cash movie Walk The Line.
