That'd be easier than modeling them out of marzipan myself...
Well custom made cakes made to look like things are usually not the tastiest cos it's the looks that count. The amount of effort put into this cake is well worth the average boring taste.
As for the elephants, maybe you could buy marzipan elephants.
I'm thinking when they make enginering in this cake ;) (you know- sun and moon, "flying" turtle, moving clouds...) Its not that hard to make light but more problems is with making sun to fly over the discworld ;P
