I almost have the game solved but am stuck. When I try to use the Nutrimat Interface with the Nutrimat in the Galley, nothing happens. What am I missing? Any hep or advice you may give will be greatly appreciated. Thanks.

I may have. How can I tell? Maybe I should list the items I have in my inventory?

Listing the inventory can be quite complex.. :-)
The ones to complete before where you're stuck, starting from the darkness:

1: Use your nose several times until there’s a dragon’s tail. Look at the tail  --> The lair
2: Use your eyes several times and look at the sun. Look several times more and the light will become bright. Look at the bright light --> Earth (playing as Ford Prefect)
3: Use your eyes again and look at the sun again but this time look until it’s less bright. Then look at the sun --> Damogran (playing as Zaphod Beeblebrox)
4: Feel the darkness several times until you notice a triangle. Use your tongue on the triangle --> Party (playing as Trillian)

if you enter the dark (using the switch on the improbability drive), and press CTRL+P, you will be able to see a list of scenarios, All should have slightly red color, and clicking them would occur into a game-over. If one of them isn't apparently you have to visit it.

I'm still stuck in this spot. I have completed all of the levels. What am i supposed to do to the nutrimat? Mousing over the nutrimat gives to thing, nutrimat or pad. Is there a tool I should be using on the nutrimat?

After completing all levels all you have to do is use the nutrimat interface on the pad or nutrimat.
