Would love to see a remake of Space Quest 3.  I love the Space Quest games.   

But I agree with mkennedy - take out that horrible Tie-Fighter arcade sequence near the end. 
Also, the Astro Chicken arcade machine in Monolith Burger could do with some improving.  It's insanely hard to beat!
