Well, actually, the title depends on the experience you have with AGS.
To the problems:

1.
''''
I have Photoshop, How can I draw old-looking sprites like Guybrush from Monkey Island 1    and 2? When I draw anything it will look like a highcolor (16-bit) sprite.

2.
'''''
When I make a game, then go to the folder, it shows 2 icons (gamename.exe and WinSetup.exe). Under the name it says Chris Jones, and something more. Can I change those?

'''''

It would be good if you could tell me the solution of both, but also the solution of 1 question
is good. I need the information because I am working on a adventuregame called "Days Offline." and I want to get forward with it.

Thanks again.

Adios,

1) (although it's not an AGS Technical question...)
Practise. They won't look like high colour sprites unless you MAKE them look like high colour sprites. Head over to the Critics Lounge and search the Tutorials thread, take a look around for inspiration, or post what you've got for advice to make it more old-school.

2)
No, you can't. In fact the License clearly says:

QuoteAnything you distribute which has been created with AGS MUST retain the Version resources unaltered in order to display the AGS version and copyright in the Version tab of the EXE properties

I know what you're thinking ... Don't think that.
